Zucchini Parmesan Crisps
4 servings
2 medium zucchini, sliced into 1/4 inch rounds
1 tablespoon extra virgin olive oil
1/2 cup bread crumbs
1/2 cup grated Parmesan
1/4 teaspoon kosher salt
Freshly ground pepper to taste
-Preheat oven to 450F. Line sheet with foil and grease with oil
-In a shallow bowl or dish, combine Parmesan, breadcrumbs, salt, and pepper; mix well and set aside.
-In a medium bowl, toss zucchini with olive oil. Then dip zucchini in breadcrumbs mixture and push, coating them well on both sides. Transfer to baking sheet. Bake 25-30minutes until breadcrumbs are golden.
